Amazing Fruit Tart Recipe l Vanilla Light Cream a Fruit Compote l Cup measuring

I used a disposable aluminum pound mold.
Any mold does not matter.

And this time I filled it with Vanilla Light Cream.
A Light Cream is a cream with less than 12% milk fat.
That is why it is also called light cream or low-fat cream.
I think it’s the perfect cream for this tart with a lot of fruit.

● Standard cup measure
237ml = 1 cup
1 egg (without shell) 53g
Heavy Cream (35% milkfat)
(Chocolate is minced, flour is before sieving)

● Pie dough

( Mold size: 15cm7cm5cm )

220g all-purpose flour (1 cup = 1/2 cup)
135g unsalted butter (1/2 cup + 2Tbsp)
50 g cold water ( 3 Tbsp + 1 tsp)
6g sugar (1/2Tbsp)
1 g salt
1 yolk

♥ Triple Berry Compote
150 g strawberries
50 g raspberries
50g blueberries
40g sugar (3Tbsp)
1/2 lemon juice

♥ Rich Vanilla Crème Lesère
yolk 1
30 g sugar (2 Tbsp + 1 tsp)
8 g cornstarch (1 Tbsp)
100g milk (1/3 cup + 1 Tbsp + 1 tsp)
1/3 vanilla bean
8g unsalted butter (1/2Tbsp)

80g heavy cream (1/3 cup)

♥ Egg Wash
yolk 1
10 g milk (2 tsp)

♥ White Chocolate
Strawberry, Kiwi, Orange, Shine Muscat,
